Aims

The aims of this course are to provide: An appreciation of the perspectives through which hospitality is studied; An understanding of the historical and contemporary contexts within which the hospitality industry operates; An understanding of the different sectors of the hospitality industry and the relationships between them; An appreciation of the key challenges facing hospitality businesses and strategies for addressing them.

Learning outcomes

On successful completion of this course a student will be able to:

1 Appreciate the various perspectives through which hospitality is studied
2 Understand the historical and contemporary environment in which the hospitality sectors have developed
3 Analyse the various sectors of the hospitality industry and the relationships between them
4 Understand the legal and ethical frameworks in which hospitality businesses operate
5 Identify key contemporary challenges facing the hospitality industry and how these are being addressed

Indicative content

• The range of perspectives through which hospitality can be studied
• The historical context in which hospitality has developed
• Definitions of hospitality and the identification of sectors
• The inter-relationship between the hospitality sectors
• The contemporary environment within which hospitality is conducted
• The nature of hospitality organisations
• International hospitality contexts and cultures
• The legal and ethical framework in which hospitality organisations operate
• Contemporary Issues in hospitality

Teaching and learning activity

Lectures, tutorials, directed and self-managed research, reading and information analysis (e.g. case studies, journal and newspaper articles including international case studies) and discussion and debate on complex and controversial issues

Assessment

Portfolio: 60% weighting. Pass mark 40%.
3,500 words.
A portfolio containing work submitted throughout the course, including written work and evidence of participation in class activities.

Group Presentation: 40% weighting. Pass mark 40%.
Equiv to 1,500 words.
A presentation and accompanying slides that engages with a key contemporary issue facing hospitality businesses.
